Epiphany

Usually I try to make us another “mini” Christmas dinner and sometimes I give the boys an extra Christmas present. However, with working all week, I only had it in me to make a 3 Kings cake for tonight.

Using a funfetti cake mix. And a random frosting recipe found on-line (powdered sugar, condensed milk, and a teaspoon of lemon juice. I threw in a tablespoon or regular milk to get better consistency).

The praline pecan I used (our baby Jesus substitute…that sounds weird, maybe because it’s late on Thursday as I’m working on this post) fell out and I had to stick it back in the cake after I baked it.

May have been a bit thick with the frosting. Still had a bit of purple/yellow/green sugars left to sprinkle on top.

The dinner I have planned for tonight: ham steaks, turkey slices from the grocery store deli (no time to cook a frozen turkey breast), sweet potatoes, dinner rolls, salad, and of course, cake. Currently, just craving pizza.

After tonight, I’ll put the rest of Christmas away. That includes the Nativity, taking down the lighted greenery around the kitchen doorway, and switching to a simple winter wreath on the front door. Everything else is already in tubs (mostly though the tubs aren’t put away).

Other weekend plans include: Catching up with reading blogs and answering/leaving comments. Dinner out with friends on Saturday, possibly with a game night. Taking J to band practice on Sunday and a long overdue trip to Target. Other stuff as well, those were just the three things that came to mind.

What are your weekend plans?

Day 6/365

  1. I’m always amazed by the people I talk to that don’t know the story behind the 12 days of Christmas or about Epiphany. I always wait until Epiphany to start de-decorating even.

Fun easy idea for your cake. We have so many goodies still around I didn’t make a King cake this year. And it doesn’t sound weird at all – years ago my mom chipped a tooth biting into the “baby” (now that sounds weird) so I’ve use an edible substitute ever since.

    1. Oh, ouch! Your poor mom. I don’t think we learned much about it growing up but somewhere along the way I learned and started making the cake and feeling better about leaving some Christmas out. My husband found our pecan this morning 🙂

  2. Dinner sounds delicious! I remember in high school our French teacher always baked a King’s Day cake (yes, complete with baby) for her classes!

    1. I did make the traditional bready style King’s cake one year but none of the family was overly fond of it (I didn’t mind it but I don’t need to eat a whole cake by myself).

    1. I started doing it a few years ago. A nice way to have one last celebration before putting away Christmas for the year.

  3. Hello, my friend. Still Christmas-ing around here! I love your King cake! Going to pack up most of the Christmas this weekend. I hope you have a lovely dinner tonight and a restful weekend!

    1. Just packed everything up this morning. Seems so bare around the house though I do still need to clean. We ended up ordering pizza instead (was actually my husband’s idea so I went with it). Hope your weekend is going well.

  4. We make a King’s Cake in Portugal too, for Christmas. When I was a kid, they used to put little trinkets in the cake. They don’t do that anymore. But I try to make my King’s Cake every Christmas. 🙂

    1. Oh, how fun. I like the idea of the trinkets. Think I may have heard of that at some point. Probably on your blog 🙂
